Red Jane is the brainchild of Nikos Tsepetis, the man behind ammos hotel. Nikos fell in love with an abandoned machining workshop, an industrial building dating back to the 50s. He bought it and set out to revive it-while also saving it from falling victim to some uninspired commercial use. As someone who excessively enjoys eating and talking about great food, for Nikos it was a natural turn of events that the old workshop should become a bakery.
