Bruges Belgian Bistro began in March 2004 when Pierre Vandamme, originally from Brugge, Belgium, brought an old family recipe to Salt Lake City, Utah. Starting as a humble waffle cart on Main Street, Pierre quickly won over locals with his Liège waffles, rich with the aroma of melting butter and caramelized sugar. As our menu grew to include Belgian-style fries and fresh dipping sauces, we established our charming restaurant near the Downtown Farmers Market.
